These are the sauces that started it all
This is the first and original of my sauces. This sauce was started as a harvest sauce tribute to the end of the growing season. Made with locally sourced apples and cider , three types of smoke , sweet peppers , onions , and garlic , and of course the chilies!! This sauce has a mixture of 19 types of home grown hot peppers of different calibers dried , smoked , and fresh. Rounding out the ingredients with a vinegar base giving it a smokey , sweet sauce with a touch of tang and tons of heat.
This sauce was created for those looking for a mild , fresh , green sauce. Originally created from my (party famous) Green apple salsa. Made with locally sourced Granny Smith apples , garlic , onions , sweet green and yellow peppers , jalapeno , cilantro , with a fresh lime and cider vinegar base , and a touch of sea salt. Tart , sweet , and mild heat.
This sauce has a massive following and is the toughest to keep in stock. Made from fresh teriyaki marinaded grilled pineapple rings and sweet onion , fresh ginger , and scorpion peppers giving this sauce a caramel pineapple sweetness with a medium bite. A favorite at pig roasts , over coconut shrimp , over cream cheese and crackers , but so tasty you'll try it on everything. A sure bet!
Yes , you heard right "Hot Sauce for desserts!" These sauces were crafted to spice up that annual cake that celebrates another trip around the sun , ice cream , cheesecakes , or anything else you desire. Yes sweet and heat do go together. 🙂
This sauce was originally called "Devilish Decadence" and was created to explore other options for hot sauce and to broaden the appeal of heat to a larger base. Having created this in Feb a few years back I thought "Chocolate Covered Strawberries..😋🤤 This sauce is truly magical.
This sauce was created in honor of everyone's favorite NCAA basketball teams , well in CT anyways. This is made with tons of wild and Farm grown Blueberries , lemon juice and a massive amount of Madagascar vanilla beans for an amazingly popular pastry style dessert sauce with a mild touch of heat. A Perfect addition to Vanilla ice cream , Cheesecake , Churros , waffles , and or anything else you can think of.
This is my version of my famous spiced Cranberry sauce. Its tart and sweet with a mild heat. The perfect compliment to poultry , pork , or any number of this and because this is acidified with citrus juice it works just as well to add a nice touch of spice to your chicken sandwich or your favorite dessert.
This is what I perceive to be in my Ultra Hot category granted I do not currently work with extracts or tinctures but the natural heat of home grown chilies. I strive to create sauces that while still full of amazing flavor have an intense burn and will challenge your tolerance for the fire.
This sauce was created as a "Challenge Sauce" in honor of one of our favorite Childhood candies and now also an adult beverage for some. This sauce features a Cherry base and tons of extremely hot cinnamon , fresh and dried Super Hot chilies. This is only a 2.5oz bottle but it packs a ton of explosive heat. 🔥🔥🔥 I came up with the name as I love fireworks and my favorite shell is called a Lampara which is a large boom followed by a fireball so hot you can feel it from the ground.

This sauce was inspired by a gifted Fig tree. I really loved the sweet flavor of figs and the way it paired well on a charcuterie board with the dried meats and hard cheeses so I got to work and created this masterpiece with dried Mission figs , fermented Black garlic , citrus , onions and shallots , aged balsamic vinegar , jalepenos spices. This sauce is packed full of awesome flavors that mingle well with roast meat , hard cheeses , Caprese salad , Focaccia , or the center of your charcuterie
